I hope all you mamas had a Happy Mother’s Day yesterday! At my house, we celebrated all the strong and wonderful mothers in my family with a yummy brunch. That included French Toast Casserole, waffles and lots of goodies.

For our family, these leading ladies are my grandma, my mama and four amazing aunts who are all like second mothers to me.

I hosted the brunch and cooked up a lot of good food. So today I wanted to share one of my grandma’s old recipes with you guys. I’ve made this before but I put a new spin on it and it turned out amazing.

I even made floral arrangements for all the moms and DIY sugar scrub as gifts.

Let’s start with all the things you’ll need to make it.

One of my favorites

I love french toast. Like I could totally eat it several times a week and be happy about it.

But as a child, I had this weird thing where I didn’t like doughy meals. So pancakes, waffles, and muffins were all out of that equation.

Once I was an adult and found french toast my mind was blown.

Then the first time I tried my grandma’s casserole, I could not believe I had missed out on this all those years as a kid. So here is how to make this yummy concoction.

Ingredients

  • Pepperidge Farm Cinnamon Swirl Bread*
  • 6 Eggs
  • 1 3/4 c. milk
  • 6 tbsp sugar (divide in half)
  • 1/2 tsp salt
  • 1 1/2 tsp vanilla extract
  • 1 1/2 tsp cinnamon

*I use the Pepperidge farm bread but you can use any bread you want. If you use a regular bread like sourdough or whole wheat, I suggest using only about 10 slices instead of the whole loaf. In that case, reduce the other ingredients as follows: 4 eggs, 1 1/2 c. milk, 4 tablespoons sugar, 1/4 teaspoon salt, 1 teaspoon vanilla extract, 1 teaspoon cinnamon

How to make french toast casserole

1. Pre-heat oven to 350°.

2. Start with your pan. Use a 9×13 pan and spray with cooking spray. Slice the bread into chunks. I usually cut it into about 9 pieces.

3) Put all the bread in the pan and spread out so there is an even layer.

4. In a separate bowl, whisk together the eggs, 3 tbsp sugar, milk, salt, and vanilla. Pour evenly over the bread. Coat all the bread with the egg mixture. I use a rubber spatula to mix the bread up.

5. Take the leftover 3 tbsp of sugar and mix together with the cinnamon. Sprinkle all over the top of the casserole.

6. Bake for 35 – 45 minutes.

7. Top with powdered sugar and syrup

8. Enjoy!
